S'mores Ice Cream Sandwiches

My go-to to survive the summer heatwaves is an afternoon swim and ice cream sandwiches. Whether jumping into a lake or floating around in a public pool, the sign of a truly wonderful sunny summer’s day is taking a post-swim bite of these delicious frozen treats. This recipe combines two summer essentials: ice cream sandwiches and s’mores. You get the toasted marshmallow flavour, the thick and fudgy chocolate sauce, the crunchy graham cracker, and the refreshingly chill vanilla ice cream. This dessert is sweet, cool, intense, and sooo easy to make!

Homemade hot fudge sauce is on another level!  My recipe for thick, fudgy chocolate sauce is pretty simple and will taste so much better than store-bought options.  It comes together so quickly!

Vanilla ice cream is my go-to for these s’mores ice cream sandwiches.  I love the Häagen-Dazs vanilla bean ice cream, and the Glacier Bilboquet Divine Vanilla ice cream.  Feel free to pick your favourite flavour.  Mint-chip, cookie dough, mocha, … the options to personalize these frozen treats are endless!

S'mores Ice Cream Sandwiches

Ice cream sandwiches and s’mores are peak summertime sweets. Combine the two, and you get a nostalgic frozen treat that can’t be beat! Toasted marshmallow + thick, fudgy chocolate sauce + chilly vanilla ice cream + crunchy graham cracker = bliss.

  • 9 graham cracker wafers snapped in 2
  • 34 marshmallows
  • 1 pint of vanilla ice cream (450-500 ml)
  • 1 cup hot fudge sauce


  1. Line an 8 X 8 inch square pan with parchment paper.
  2. Line the bottom of the pan with 9 graham crackers.
  3. Sprinkle 34 marshmallows over the graham crackers.
  4. Toast the marshmallows in the oven using the broil feature.  Keep an eye on the marshmallows at all times so that they do not burn.  
  5. When the marshmallows are nice and toasty, transfer the pan to a wire rack and let cool to room temperature.
  6. Take the vanilla ice cream out of the freezer to let it soften a bit.
  7. Scoop the vanilla ice cream onto the toasted marshmallows.  Spread evenly with a small offset spatula.  
  8. Place the pan in the freezer to let the ice cream set.
  9. Pour the fudge sauce (room temperature, not hot) onto the ice cream layer and spread evenly with a small offset spatula.
  10. Place the pan in the freezer to let the fudge sauce set.
  11. Place 9 graham crackers onto the fudge sauce layer.
  12. Place the pan back in the freezer until ready to serve.
  13. Slice the s’mores ice cream sandwiches into 9 portions.
