  • 2 tbsp unsalted butter
  • 2/3 cup heavy whipping cream, 35%
  • 1/2 cup honey
  • 1/4 cup (50g) packed dark brown sugar
  • 1/4 cup (20g) cocoa powder
  • 1/4 tsp salt
  • 6 oz (170g) semi-sweet chocolate, chopped
  • 1/2 tsp pure vanilla extract

  1. Put the butter, cream, honey, sugar, cocoa powder and salt in the small saucepan.
  2. Bring the ingredients to a simmer over medium heat.  Stir the ingredients with a spatula until incorporated.
  3. Turn the heat down to low and let simmer for 5 minutes.
  4. Remove the saucepan from the heat and stir in the chopped chocolate until it is melted and incorporated.
  5. Stir in the vanilla.

I’ve only tasted 2 of two of your recipes so far but this one is by far my favourite! Shortbread always reminds me of my time in Scotland!
